摘要 目的:分析食品安全抽样微生物检验过程的质量控制实施效果。方法:选取本检验单位检验人员20名作为观察对象,实施食品安全抽样微生物检验过程的质量控制策略,对比质量控制实施前后检验人员对食品安全国家标准的知晓率、培养基管理质量水平、实验室环境合格率。结果:实施后,检验人员GB 4789系列标准(70.00%)、GB 5009/GB 5431系列标准(60.00%)、GB 14881—2013标准(80.00%)知晓率分别显著提高至95.00%、90.00%、100.00%(P<0.05);培养基的质检报告索取率(90.67%)、性能测试率(85.33%)、无菌测试率(92.67%)、灭菌记录完整率(95.33%)均显著提高至100.00%(P<0.05);实验室环境参数温度(80.00%)、相对湿度(83.33%)、噪音(76.67%)、平均照度(83.33%)的合格率显著提高至100.00%、100.00%、96.67%、100.00%(P<0.05)。结论:对食品安全抽样检验实施质量控制,可以减少检验过程中各因素的影响,提高检验结果准确性。 Objective:To analyze the effect of quality control in food safety sampling microbiological inspection process.Method:Twenty inspectors of the inspection unit were selected as the observation objects to implement the quality control strategy of food safety sampling microbial inspection process,and compared the awareness rate of inspectors of national food safety standards,the quality level of media management and the qualification rate of laboratory environment before and after the implementation of quality control.Result:After the implementation,the awareness rate of inspectors of GB 4789 series standards(70.00%),GB 5009/GB 5431 series standards(60.00%)and GB 14881—2013 standard(80.00%)was significantly increased to 95.00%,90.00%and 100.00%,respectively(P<0.05).The request rate of quality inspection report(90.67%),performance test rate(85.33%),sterility test rate(92.67%)and sterilization record integrity rate(95.33%)of medium were significantly increased to 100.00%(P<0.05).The qualified rates of laboratory environmental parameters such as temperature(80.00%),relative humidity(83.33%),noise(76.67%)and average illumination(83.33%)were significantly increased to 100.00%,100.00%,96.67%and 100.00%(P<0.05).Conclusion:The implementation of quality control on food safety sampling inspection can reduce the influence of various factors in the inspection process and improve the accuracy of inspection results.
