摘要
目的:研究不同预处理对芡实茎冷冻期间品质和抗氧化能力的影响。方法:以凤阳地区种植的芡实茎为原料,采用漂烫、微波和短波紫外辐照等方式进行预处理,在-20℃贮藏期间测定芡实茎的质量损失率、可溶性固形物、色泽、维生素C、多酚氧化酶、过氧化物酶和过氧化氢酶的活力。结果:漂烫、微波和短波紫外辐照处理均能有效地提高芡实茎在贮藏期间的品质,其中短波紫外组处理效果最佳。在贮藏第35天,短波紫外组的质量损失率、总色差和多酚氧化酶活力比对照组分别降低10.73%、42.40%和42.09%,可溶性固形物、维生素C、过氧化物酶和过氧化氢酶活力分别是对照组的1.44、2.42、2.28和1.40倍。结论:短波紫外辐照处理可以有效地维持芡实茎在冷冻贮藏期间的品质,可以为芡实茎预处理提供理论基础和参考依据。
Objective:To study the effects of different pretreatment methods on the quality and antioxidant activity of Euryale ferox stem during freezing.Methods:The stems of Euryale ferox planted in Fengyang area were pretreated by blanching,microwave and short wave ultraviolet irradiation(UV-C).The mass loss rate,soluble solids,color,vitamin C,polyphenol oxidase,peroxidase and catalase activity of Euryale ferox stem during storage at-20℃were determined.Results:Blanching,microwave,and short wave ultraviolet irradiation could effectively improve the quality of Euryale ferox stem during storage,with the best effect being obtained by short wave ultraviolet irradiation.On the 35th day of storage,the mass loss rate,total chromatic difference and polyphenol oxidase activity in the short wave ultraviolet group were decreased by 10.73%,42.40%and 42.09%compared with the control group respectively,and the activities of soluble solids,vitamin C,peroxidase and catalase were 1.44,2.42,2.28 and 1.40 times that of the control group respectively.Conclusion:Short wave ultraviolet irradiation treatment could effectively maintain the frozen storage quality of Euryale ferox stem,which could provide theoretical basis and reference basis for the pretreatment of Euryale ferox stem.
