摘要
硫是生命机体的必需元素,而动植物食品中的含硫化合物则是机体硫的主要来源,因而准确定量食品中总硫水平是评价不同人群膳食硫摄入的关键,但目前常用的离子色谱法、高分辨率连续光源原子吸收光谱法以及电感耦合等离子体质谱法等方法,其适用样品、测定原理、样品前处理的方式、基质干扰各有优势。本文对不同硫测定体系的灵敏度、准确度、样品适用性以及适用范围进行归纳综述,以期为建立一种理想实用的动植物食品中总硫测定体系以准确评估人群硫摄入量,并为不同职业人群的硫营养干预提供参考。
The sulfur is an essential element of the body,and the sulfur compounds in animal and plant foods are the main source of sulfur in the body. Therefore,accurate measurement of the total sulfur content in food is the key to evaluate the dietary sulfur intake of different populations. However,the commonly used methods,such as ion chromatography,high-resolution continuous light source atomic absorption spectrometry and inductively coupled plasma mass spectrometry,have their own advantages in sample application,determination principle,sample pretreatment method and matrix interference.This paper comprehensively analyzes the sensitivity,accuracy,applicability and scope of sample application of different sulfur determination methods in order to provide an optimal reference for establishing an ideal and practical method for the determination of total sulfur in animal and plant food to accurately measure the sulfur intake of people and for sulfur nutrition intervention of different occupational groups.
