摘要
文章为探究当前江苏省羊肉市场基本情况,对目前江苏省羊肉消费现状及个体特征进行统计分析,明晰当前江苏省肉羊消费情况,并且根据调研当前江苏省人均羊肉消费情况,测算省内需求收入弹性及需求价格弹性,从而对未来江苏羊肉消费量趋势进行预测。结果表明:(1)2021年江苏省羊肉消费量占总体肉类消费的比重为2.6%,其中羊肉膻味是阻碍消费者消费羊肉的主要原因;(2)消费者在购买羊肉时,将羊肉质量安全、新鲜程度、羊肉气味及羊肉的外观等作为首要选购标准的占比较多。此外,羊肉品种、羊肉类型、购买渠道等在消费者羊肉消费中的偏好也有所差异。文章以市场为导向,探讨当前羊肉市场的消费特点,厘清其消费偏好,对于挖掘其需求潜力,把握科研部门未来良种培育方向以及针对性改进企业生产有重要作用。
To explore the current situation of the lamb market in Jiangsu Province,this paper statistically analyzed the current status and individual characteristics of lamb consumption in Jiangsu Province,clarified the current lamb consumption in Jiangsu Province.By investigating the current per capita consumption of lamb in Jiangsu Province,the income elasticity of demand and price elasticity of demand in the province were caculated,and future consumption trend of lamb in Jiangsu Province was predicted.The results showed that:(1)In 2021,the consumption of lamb in Jiangsu Province accounted for 2.6%of the overall meat consumption.The mutton smell was the main reason for hindering consumers to consume lamb;(2)For high proportions of consumers,quality and safety of lamb,freshness,mutton smell and the appearance of lamb were the primary purchase criteria for purchasing lamb.In addition,lamb varieties,lamb parts,purchasing channels also varied in the consumer’s preference for lamb consumption.Based on market guidance,this article discussed the current consumption characteristics of the lamb market,clarified the consumption preferences,and played an important role in exploring the demand potential,grasping the future direction of breed cultivation by the research department,as well as production targeting improvement of the industry.
