气调条件下油茶籽贮藏品质变化动力学研究 被引量:4

Study on kinetics of storage quality change of camellia oleifera seeds under different controlled atmosphere

摘要 针对油茶籽贮藏过程中品质劣变严重、贮藏期短的问题,探究98%N_(2)气调、40%CO_(2)气调、真空和空气贮藏条件对油茶籽贮藏过程中含水率、含油率、酸值、过氧化值、脂肪酶及脂氧合酶活性变化的影响,采用零阶和一阶数学模型对试验数据进行拟合。结果表明,98%N2气调、40%CO_(2)气调和真空贮藏可以显著减少油茶籽水分的损失,并通过抑制脂肪酶和脂氧合酶活性,延缓酸值和过氧化值的增加,贮藏6个月后,油茶籽酸值、过氧化值分别从初始的0.188 mg/g,0.448 mmol/kg最大增加到0.707 mg/g,1.772 mmol/kg;一阶模型可以较好地描述不同条件下油茶籽贮藏过程中酸值和空气、40%CO_(2)气调条件下过氧化值的变化。研究为油茶籽气调贮藏品质变化规律的探究及贮藏条件的选择提供理论依据。 To solve the problem of serious quality degradation and short storage period of camellia oleifera seeds during storage,the effects of controlled atmosphere of 98%N2,controlled atmosphere of 40%CO_(2),vacuum and atmosphere storage conditions on the changes of moisture content,oil content,acid value and peroxide value,lipase activity and lipoxygenase activity were explored.Zero-order and first-order mathematical models were used to simulate the experiment data.The results show that compared with atmosphere storage,controlled atmosphere of 98%N_(2),controlled atmosphere of 40%CO_(2)and vacuum storage can significantly reduce the moisture loss and delay the increase of acid value and peroxide value by inhibiting the activities of lipase and lipoxygenase.After 6 months of storage,the acid value and peroxide value of camellia oleifera seeds only increased from 0.188 mg/g and 0.448 mmol/kg to 0.707 mg/g and 1.772 mmol/kg,respectively.The first-order model can well describe the changes of acid value during storage of camellia oleifera seeds under different conditions and peroxide value under controlled atmosphere of 40%CO_(2)and atmosphere.The study provides a theoretical basis for the study of the quality variation of camellia oleifera seeds and the selection of storage conditions.
