摘要
莲子营养丰富,是药食同源产品之一,既可药用也可食用,既可鲜食也可做成休闲食品。基于对2011—2022年CNKI数据库中以莲和莲子为主题的文章进行定量分析,综述莲子的保健功效,介绍现阶段莲子产品的加工情况。
Lotus seed is one of the homologous products of medicine and food,which is rich in nutrition.It can be used for medicine and food,also can be used for fresh food and snack food.Based on the quantitative analysis of articles on lotus and lotus seeds in CNKI database from 2011 to 2022.This article summarized the health care efficacy of lotus seeds and introduced the processing status of lotus seed products at present stage.
