摘要
成书于元代的《熬波图》是我国现存年代最早、记录最详细的海盐生产工艺典籍。结合近年盐业考古新发现,对其所记载的摊场建设、淋卤和煮盐三大工艺环节进行实证研究,初步概括我国淋煎法制盐工艺的演进。在今后沿海地区盐业考古工作中,应重视《熬波图》的记载和相关线索,也应认识到记载具有地域性。
The Aobo Tu,compiled during the Yuan Dynasty,is the earliest extant and most detailed ancient Chinese text documenting the production process of sea salt,including four major stages and more than ten specific procedures in salt production.Together with recent discoveries in salt archaeology,this study conducts empirical research on three major stages of salt production processes during the Song and Yuan periods as documented in the Aobo Tu,namely,the construction of salt fields,brine concentration,and salt boiling.Within the section on salt field construction,archaeological discoveries have corroborated the existence of features such as the yuehe crescent-shaped river,salt wells,and spreading out grass and wood ash in the field during the salt field construction stage.In the brine concentration stage,archaeological evidence supports the use of brine concentration pits,trial brine pipes,and dry lotus seeds.In the salt boiling stage,iron pans and stoves have also been discovered.This study also preliminarily summarizes the evolution of brine concentration and boiling techniques involved in salt production in China.The author suggests that documental evidence in the Aobo Tu and related clues should be considered seriously in future coastal salt archaeological work,and the clear regional distinctions recorded in these textual records should also be acknowledged.
