摘要
无花果果实皮薄无核,肉质松软,营养丰富,硒含量较高,是目前研究较多、药食兼用浓硒果树。研究无花果“硒”营养健康价值及富硒途径,对开发无花果富硒食品、功能食品,延长无花果产业链,加快无花产业发展,促进农民增收及乡村振兴有重要意义。本文立足于无花果富硒营养健康、硒存在形态、富硒途径、硒提取技术等方面,系统总结了国内当前相关领域新进展及成果,指出了存在的问题,提出了今后无花果富硒产业发展的措施。
The fig fruit is thin and seedless,the flesh is soft,the nutrition is rich,the selenium content is far higher than other fruits,it is the concentrated selenium fruit tree which is studied more and used in medicine and food at present,the research of its“Selenium”nutrition health value and the way of enriching selenium,it is of great significance to develop selenium-rich food and health functional food of figs,to extend the industrial chain of figs,to speed up the development of figs industry,to protect the income of farmers and to revitalize the countryside.In this paper,the authors systematically summarized the new progress and achievements in the related fields in China from the aspects of selenium-enriched nutrition and health,selenium forms,selenium-enriched ways,and selenium extraction technologies,and pointed out the existing problems,the development measures of selenium-enriched fig industry in the future were put forward.
