摘要
食品中微量元素铅、砷的污染对公众健康构成严重威胁。先进的检测技术在提高检测精度和可靠性、促进食品安全标准的制定与完善、增强消费者信心以及发现和预防食品安全隐患方面具有重要作用。本文探讨铅、砷的来源及危害,分析原子吸收光谱法、电感耦合等离子体质谱法和X射线荧光光谱法等检测技术对食品质量安全的影响与对策。
The contamination of trace elements lead and arsenic in food poses a serious threat to public health.Advanced detection technology plays an important role in improving detection accuracy and reliability,promoting the formulation and improvement of food safety standards,enhancing consumer confidence,and discovering and preventing food safety hazards.This paper discusses the source and harm of lead and arsenic,analyzes the influence of atomic absorption spectrometry,inductively coupled plasma mass spectrometry and X-ray fluorescence spectrometry on food quality and safety and countermeasures.
