摘要
本试验旨在研究饲粮中添加酵母硒和二羟基丙酮对山羊生长性能、营养物质表观消化率、屠宰性能、肉品质及血清生化、抗氧化指标的影响。选取6月龄健康、雄性川中黑山羊96只,平均体重(24.83±1.50)kg,随机分为4组,每组4个重复,每个重复6只羊。对照组(CON组)饲喂基础饲粮,试验组分别在基础饲粮中添加0.3 mg/kg的酵母硒(SY组)、25 mg/kg的二羟基丙酮(DHA组)及0.3 mg/kg的酵母硒+25 mg/kg的二羟基丙酮(SY-DHA组)。预试期10 d,正试期60 d。结果表明:1)与CON组相比,SY组和SY-DHA组的平均日增重(ADG)和平均日采食量(ADFI)显著提高(P<0.05),料重比(F/G)显著降低(P<0.05)。2)与CON组相比,SY组和SY-DHA组的干物质、粗蛋白质和中性洗涤纤维表观消化率显著提高(P<0.05)。3)各组之间屠宰性能和器官指数均无显著差异(P>0.05)。4)与CON组相比,SY组和SY-DHA组的背最长肌和股二头肌红度值、pH 45 min显著提高(P<0.05),且SY-DHA组的股二头肌红度值显著高于SY组(P<0.05)。与CON组相比,SY组、DHA组和SY-DHA组的背最长肌滴水损失和股二头肌pH 24h显著降低(P<0.05)。5)与CON相比,SY组、DHA组和SY-DHA组的血清总蛋白(TP)含量显著提高(P<0.05),血清碱性磷酸酶(ALP)活性显著降低(P<0.05);DHA组和SY-DHA组的血清球蛋白(GLB)、高密度脂蛋白(HDL)含量显著提高(P<0.05),SY-DHA组的血清白蛋白(ALB)、总胆固醇(TC)含量显著提高(P<0.05)。6)与CON相比,SY组、DHA组和SY-DHA组的血清总抗氧化能力(T-AOC)显著提高(P<0.05),血清丙二醛(MDA)含量显著降低(P<0.05);SY组和SY-DHA组的血清谷胱甘肽过氧化物酶(GSH-Px)、超氧化物歧化酶(SOD)活性显著提高(P<0.05)。综上所述,饲粮中添加酵母硒可以提高山羊生长性能和营养物质表观消化率;饲粮中添加酵母硒或二羟基丙酮均可以改善山羊肉品质,提高血清TP含量,改善脂质代谢,提高抗氧化能力,酵母硒和二羟基丙酮联合添加效果更优。
This experiment was conducted to study the effects of dietary selenium yeast and dihydroxyacetone on growth performance,slaughter performance,meat quality and serum biochemical and antioxidant indices of goats.Ninety-six 6-month-old healthy male Chuanzhong black goats with an average body weight of(24.83±1.50)kg were selected and randomly divided into 4 groups with 4 replicates per group and 6 goats per replicate.Goats in the control group(CON group)were fed a basal diet,and others in experimental groups were fed the basal diets supplemented with 0.3 mg/kg selenium yeast(SY group),25 mg/kg dihydroxyacetone(DHA group)and 0.3 mg/kg selenium yeast+5 mg/kg dihydroxyacetone(SY-DHA group),respectively.The pre-experimental period lasted for 10 days,and the experimental period lasted for 60 days.The results showed as follows:1)compared with CON group,the average daily gain(ADG)and average daily feed intake(ADFI)of SY and SY-DHA groups were significantly increased(P<0.05),and the feed to gain ratio(F/G)was significantly decreased(P<0.05).2)Compared with CON group,the dry matter,crude protein and neutral detergent fiber apparent digestibilities of SY and SY-DHA groups were significantly increased(P<0.05).3)There were no significant differences in slaughtering performance and organ indices among all groups(P>0.05).4)Compared with CON group,the redness value and pH 45 min in longissimus dorsi and biceps femoris of SY and SY-DHA groups were significantly increased(P<0.05),and the redness value in biceps femoris of SY-DHA group was significantly higher than that of SY group(P<0.05).Compared with CON group,the drip loss in longissimus dorsi and pH 24 h in biceps femoris of SY,DHA and SY-DHA groups were significantly decreased(P<0.05).5)Compared with CON group,the serum total protein(TP)content of SY,DHA and SY-DHA groups was significantly increased(P<0.05),and the serum alkaline phosphatase(ALP)activity was significantly decreased(P<0.05);the contents of globulin(GLB)and high-density lipoprotein(HDL)in serum of DHA and SY-DHA groups were significantly increased(P<0.05),and the contents of albumin(ALB)and total cholesterol(TC)in serum of SY-DHA groups were significantly increased(P<0.05).6)Compared with CON group,the serum total antioxidant capacity(T-AOC)of SY,DHA and SY-DHA groups was significantly increased(P<0.05),and the serum malondialdehyde(MDA)content was significantly decreased(P<0.05);the activities of glutathione peroxidase(GSH-Px)and superoxide dismutase(SOD)in serum of DHA and SY-DHA groups were significantly increased(P<0.05).In summary,dietary selenium yeast can improve the growth performance and nutrient apparent digestibilities of goats;dietary selenium yeast or dihydroxyacetone can improve the meat quality of goats,increase the serum TP content,improve the lipid metabolism and enhance the antioxidant capacity,and the combined addition of selenium yeast and dihydroxyacetone has a better effect.
