摘要
伴随网络直播和带货的兴起,肚包肉成为新晋网红产品,市场中肚包肉良莠不齐。为维护消费者合法权益和保障食品安全,对网红产品肚包肉真伪及掺假情况进行分析。根据现行行业标准SN/T 3731.5—2013《食品及饲料中常见禽类品种的鉴定方法第5部分:鸭成分检测PCR法》、SN/T 2727—2010《饲料中禽源性成分检测方法实时荧光PCR方法》和SN/T 3730.8—2013《食品及饲料中常见畜类品种的鉴定方法第8部分:猪成分检测实时荧光PCR法》以及自主研发的三重实时荧光PCR检测方法,对3个商家9份肚包肉样品中鸭和猪源性成分进行检测。结果表明,检测9份肚包肉样品,其中1份检测到鸭源性,阳性样品溯源检测结果表明所用原料肉含有鸭源性成分,9份均未检测到猪源性。网红产品肚包肉存在鸭肉掺假现象,相关部门应该加强对肚包肉的监管力度并加快制定肚包肉产品标准。
With the rise of network live broadcasting and belt goods,belly meat had become a new Internet celebrity product.In order to safeguard the legitimate rights and interests of consumers and ensure food safety,this experiment analyzed the authenticity and adulteration of belly meat of Internet celebrity product.According to the current industry standards SN/T 3731.52013"Methods for identification of poultry species commonly used in food and feed-Part 5:PCR method for detection of duck components",SN/T 2727-2010"Methods for detection of Poultry Components in Feed:Real-time fluorescence PCR"and SN/T 3730.8—2013"Methods for identification of common animal breeds in food and feed-Part 8:Real-time PCR method for detection of pig ingredients",the possible duck and pig origin ingredients in 9 belly meat samples from 3 merchants were detected in this study.The results showed that nine samples of belly meat were detected,among which duck component was detected in 1 sample,and no pig component was detected in all the 9 samples.As duck meat was adulterated in the online celebrity product belly meat,relevant departments should strengthen supervision of belly meat and speed up the formulation of product standards.
