2019—2021年上海市嘉定区市售禽肉中食源性致病菌污染状况调查

Analysis of Foodborne Pathogenic Bacterial Contamination in Poultry from Jiading District of Shanghai from 2019 to 2021

摘要 目的:了解2019—2021年上海市嘉定区市售禽肉中食源性致病菌污染状况,并进行分析,为相关部门制定防控策略提供参考依据。方法:采集市售的鸡、鸭、鹅、鸽4类禽肉样本进行沙门氏菌、单核细胞增生李斯特氏菌、产气荚膜梭菌、致泻大肠埃希氏菌、小肠结肠炎耶尔森氏菌、弯曲菌6种食源性致病菌的分离鉴定。结果:236份市售禽肉样品中,检出阳性样品162件,致病菌阳性率为68.64%。其中,鸡肉中致病菌阳性率为77.66%、鹅肉为66.67%、鸭肉为63.93%、鸽肉为57.78%;沙门氏菌阳性率为37.71%、弯曲菌为26.69%、单核细胞增生李斯特氏菌为17.37%、产气荚膜梭菌为13.56%、致泻大肠埃希氏菌为10.17%,未检出小肠结肠炎耶尔森氏菌。冷藏状态下市售禽肉样品致病菌阳性率最高,冷冻状态下致病菌阳性率最低。超市、农贸市场、网购仓库、餐饮点4类采样地点市售禽肉阳性率比较,差异无统计学意义(P>0.05);市售禽肉散装、预包装样品阳性率比较,差异无统计学意义(P>0.05)。结论:上海市嘉定区市售禽肉食源性致病菌污染严重,禽肉冷冻保存能降低致病菌感染风险,禽肉中致病菌的污染程度与销售渠道、包装方式关联性不大。相关部门应加强禽肉宰杀及出厂过程的监管,从而降低市售禽肉致病菌污染。 OBJECTIVE To investigate the contamination status of foodborne pathogens in retail poultry meat in the Jiading District of Shanghai from 2019 to 2021,and to provide a reference for relevant departments to formulate prevention and control strat⁃egies.METHODS Retail chicken,duck,goose,and pigeon meat samples were collected to isolate and identify six major foodborne pathogens:Salmonella spp,Listeria monocytogenes,Clostridium perfringens,Escherichia coli,Yersinia enterocolitica,and Campylo⁃bacter spp.RESULTS Out of the 236 retail poultry meat samples collected,162 samples tested positive for foodborne pathogens,with an overall positive rate of 68.64%.Specifically,the positive rates were:Salmonella spp(37.71%),Campylobacter spp(26.69%),Liste⁃ria monocytogenes(17.37%),Clostridium perfringens(13.56%),and diarrheagenic Escherichia coli(10.17%).Yersinia enterocolitica was not detected.The pathogen positive rate was highest in chicken meat(77.66%),followed by goose(66.67%),duck(63.93%),and pigeon(57.78%).Refrigerated poultry samples had the highest pathogen positive rate,while frozen samples had the lowest.There was no statistically significant difference in the pathogen positive rates among poultry samples collected from supermarkets,wet mar⁃kets,online warehouses,and catering establishments,nor between bulk and pre-packaged samples(P>0.05).CONCLUSION The re⁃sults indicate that retail poultry meat in the Jiading District of Shanghai is severely contaminated with foodborne pathogens.Howev⁃er,freezing poultry meat can help reduce the risk of pathogen infection.The level of pathogen contamination in poultry meat does not appear to be significantly associated with the sales channel or packaging method.Relevant authorities should strengthen the su⁃pervision of the slaughter and production process for poultry in order to reduce pathogen contamination in retail poultry meat.
