摘要
随着人们生活水平的提高,科学技术的发展,食品安全成为社会各界重点关注的焦点。农药在食用农产品中能确保农作物健康地成长,提高一定的产量;但农药的过量喷洒或农作物吸收含有过量的农药水体等会造成农药残留问题,威胁着人们的健康安全,也严重地破坏生态环境。采用高灵敏度,准确、高效的质谱检测技术能够快速准确地对残留农药进行定性和定量分析,从而为农药残留摄入进行风险的评估,保护人类健康和环境安全。本文通过综述质谱技术原理以及在农药残留检测领域中的应用情况,说明高分辨质谱技术将作为常规检测方法被应用于食品中多种类农药残留检测的可行性。
With the improvement of people's living standards and the development of science and technology,food safety has become a key focus of attention from all sectors of society.Pesticides in edible agricultural products can ensure the healthy growth of crops and increase a certain yield.However,excessive spraying of pesticides or absorption of water containing excessive pesticides by crops can cause pesticide residue problems,threaten people's health and safety,and seriously damage the ecological environment.The use of highly sensitive,accurate,and efficient mass spectrometry detection technology can quickly and accurately conduct qualitative and quantitative analysis of residual pesticides,thereby assessing the risk of pesticide residue intake and protecting human health and environment.It was aimed to explain the feasibility of high-resolution mass spectrometry technology being applied as a routine detection method for detecting multiple types of pesticide residues in food by reviewing the principles of mass spectrometry technology and its application in the field of pesticide residue detection.
