食用油脂在为人们提供日常所需能量的同时,也可能因含有各种有害物质而对消费者的健康构成潜在威胁。这些有害物质可能来源于油脂的原料、加工过程或储存条件等多个环节,为了深入了解和评估这些有害物质的风险,本文进行了广泛而系统的文献搜集和深入分析。通过对现有研究的梳理和总结,系统识别了油脂行业中常见的有害物质,包括重金属、农药残留、反式脂肪酸、多环芳烃等,并详细探讨了其在油脂生产、加工和储存过程中的来源和形成机制。在深入分析这些有害物质的基础上,本文进一步探讨了食用油脂对人体健康的潜在影响,以期提升公众对食用油脂中有害物质的认识,且为油脂行业的健康发展提供科学依据。
Edible fats not only provide us with the energy we need for daily life,but also pose a potential threat to consumer health due to the presence of various harmful substances.These harmful substances may originate from multiple aspects such as the raw materials,processing,or storage conditions of fats and oils.In order to gain a deeper understanding and evaluation of the risks associated with these harmful substances,this article conducted extensive and systematic literature collection and in-depth analysis.Through sorting and summarizing existing research,we systematically identified common harmful substances in the oil and fat industry,including heavy metals,pesticide residues,trans fatty acids,polycyclic aromatic hydrocarbons,etc.,and explored in detail their sources and formation mechanisms in oil production,processing,and storage processes.On the basis of in-depth analysis of these harmful substances,this article further explores their potential impact on human health.This study aims not only to enhance public awareness of harmful substances in edible oils,but also to provide scientific basis for the healthy development of the oil industry.
