摘要
本文介绍了木糖母液制备焦糖色素的工艺,并对各工艺要点进行了详细讨论,指出以木糖母液制备焦 糖色素的工艺为:(1)、以弱碱除杂;(2)焦糖化反应的温度110~115℃,反应时间小于3.5小时。
This article introduced a method of making caramel dye by wood sugar mother liquid,and discussed the technology. Point out the best condition is: 1.remove impurity from wood sugar mother liquid with the weak alkali. 2.caramel reaction temperature is 110~115'C ,the longest reaction time is 3.5 hours.
