摘要
增溶作用是食品工业中应用的高新技术之一。本文简要地介绍了影响增溶剂增溶能力的有关因素以及在增溶剂的选取时应注意的有关问题。
Solubilization is one of the modern high technique applied to food industry.In this paper,factors which affecting solubilizing activity(solvability)of solubilizer are briefly described,and problems in choosing solubilizer are discussed.
