真空预冷技术在茶树菇冷藏保鲜上的应用研究 被引量:8

摘要 本研究将真空预冷技术配合塑料薄膜袋包装应用于冷藏保鲜茶树菇的预处理 ,研究该技术对冷藏保鲜的辅助作用 ,并筛选出最佳预处理工艺条件。结果表明 :采用真空室的真空度35 0Torr,真空预冷终温 0℃ ,真空预冷时间 2 0min ,进行真空预处理并配合塑料薄膜袋包装的茶树菇比一般的冷藏保鲜效果明显更好。表现在 :冷藏十天不开伞、不干缩、表面膜不脱落、失重率减少 7% ,呼吸强度曲线明显下移 ,呼吸高峰推迟 2d出现 ,峰值降低 30 % ,VitC保存率提高 2 0 .5 %。 On this paper, the technology of vacuum pre-cooling together packing with plastic cuticle were applied to the qudemansiella radicata's keeping fresh in cold. The subservient agency of this technology on keeping fresh in cold was studied. The results indicated that it's effect was obviously better than the ordinary keeping fresh in cold and the optimal condition was obtained as follows: the vacuum size of vacuum room was 350 Torr, the temperiture of vacuum room was 0℃, the time of vacuum pre-cooling was 20 minutes. There were no expansiving,no dry constriction, no surface cuticle shedding. The rate of weight loss decreased 7%.The maximum respiration decreased 30% and the strength of respiration decreased obviously. The maximum respiration decay 2 day. The keeping rate of VitC rose 20.5%.
